BusyBoy, GigglyGirl, and I were watching the Food Network yesterday and saw these Turkey and Bean Empanadas.  So, we are going to make these on Friday with leftover turkey from Thanksgiving.  We may also make Turkey Shepherd’s Pie depending on how much turkey we have leftover.

Thawing Time in Refrigerator Approximately 24 hours per 5 lbs

Whole Turkey Weight        Thawing Time
8 to 12 lbs                             1 to 2 days
12 to 16 lbs                           2 to 3 days
16 to 20 lbs                           3 to 4 days
20 to 24 lbs                           4 to 5 days

Thawing Time in Cold Water

Approximately 30 minutes per pound
Change water every 1/2 hour.

Whole Turkey Weight         Thawing Time
8 to 12 lbs                             4 to 6 hours
12 to 16 lbs                           6 to 8 hours
16 to 20 lbs                           8 to 10 hours
20 to 24 lbs                           10 to 12 hours

After thawing, remove neck and giblets from both neck and body cavities, wash turkey inside and out with cold water, drain well. Thawed turkey may remain in the refrigerator 1 to 2 days.

Tuesday:  Chicken and Apple Casserole
Wednesday:  Chicken NuggetsPineapple Casserole, broccoli
Thursday:  Leftovers
Friday:  Breakfast for Dinner:  French Toast, turkey bacon
Saturday:  Taco Ring, salad
Sunday:  Roast, carrots, potatoes, salad

We are getting ready for a garage sale this weekend, so there will be a lot of easy recipes.  Wednesday is our 15th Wedding Anniversary!  Woohoo!!  We are probably not going out on Wednesday night but we do have a special dinner planned at home.

Monday:  Taco Ring, broccoli

Tuesday:  Chicken & Apple Casserole, rice, salad

Wednesday:  Marinated Steak, Potato Casserole Supreme, Green Beans with Almonds, Green Leaf Salad with Oranges

Thursday:  7 Layer Casserole

Friday:  Chicken Pot Pie

Saturday:  Leftovers

Sunday:  Roast, carrots, potatoes, Jello with Fruit

7 Layer Casserole


Note:  amount of ingredients depends on size of casserole dish.

Note:  ground beef may be substituted for ground turkey below.

  • Potatoes, sliced
  • Carrots, peeled and sliced
  • Frozen corn
  • 3 tablespoons rice
  • Onion, sliced
  • Ground turkey breast (season with salt and pepper to taste)
  • 1 can condensed tomato soup


  • In a large casserole dish, layer the above ingredients.
  • Bake at 350 degrees for 1 hour or until turkey is thoroughly cooked and fork easily goes through to the bottom of casserole.
